I have Zena's in my garden this year and want to know how to harvest the flowers to use as seeds for next year. Do I just cut the flower off after it dies?

I assume you mean Zinnias.
Wait until the flower head is dried up then cut it off and put in a single layer on a plate inside to thoroughly dry. Wait at least three or four weeks.
When completely dried out rub the seeds out by hand. Put them in a baggie for next years flower garden.
I have saved my own seed for years. Plant them a little thicker then normal and thin them after they are a couple inches tall.
Reply:CUT OFF THE FLOWERS AND LAY THEM INSIDE ON A PAPER TOWEL IN A WARM DRY PLACE TILL THEY ARE GOOD AND DRY. THEN YOU CAN PUT THEM TOWEL AND ALL INTO A ZIPLOC BAG TILL NEXT YEAR...SOME PEOPLE EVEN FREEZE THEM TIL READY TO USE BUT I JUST DRY THEM AND PUT THEM IN A BAGGIE TIL I WANT TO USE THEM
